Pappardelle Pasta with Pancetta Block and Burrata

Ingredients:

• 280g (10 oz) pappardelle pasta

• 115g (4 oz) De Gustibus Pancetta Block 100g, diced

• ½ large white onion, chopped

• 2 garlic cloves, chopped

• 2 tbsp fresh parsley, chopped

• 2 tbsp fresh chives, chopped

• 1 tbsp lemon juice

• 170g (6 oz) burrata cheese

• ½ cup freshly shredded parmesan

• Kosher salt and pepper, to taste

Recipe:
  1. Bring a pot of salted water to boil. Cook pappardelle until al dente. Reserve 2 cups of pasta water.
  1. In a large skillet, sauté pancetta over medium heat until browned (5 mins).
  1. Add onion and sauté 3–4 minutes. Add garlic and cook 30 seconds.
  1. Add cooked pasta and 1 cup pasta water to the pan. Stir until sauce thickens slightly (1–2 minutes).
  1. Add parsley, chives, and lemon juice. Stir to combine.
  1. Remove from heat. Tear burrata into pieces and fold into the pasta with parmesan. Serve immediately,
